Hard White Winter Wheat

For the last few years, we have been working on the development of a new population of hard white winter wheat for bread production. Bakers want bread that is more pleasing to the eye and palate of buyers than whole wheat bread made with hard red wheat. We want to provide greater nutrition than any other bread wheat currently on the market. Out of 42 lines we harvested and milled for flour, we found 9 with significant yellow color. We planted these 9 lines with the hope of harvesting enough seed in 2026 for bake tests and nutritional analysis.
